Persons with diabetes should be concerned with making sure they stick to low-glycemic foods that digest more slowly, because their vital organs can be damaged. Among other complications, the affect of constantly spiking your blood sugar level requires the pancreas to work extra hard to handle all that sugar - and it can burn out! It's unhealthy to have high blood sugar too often, and for too long. When the pancreas finally stops working, then the person needs an artificial aid to push their blood sugar down to normal levels -- that's what the insulin injections are for.
The distinction between foods that have a high-glycemic index and those with a low-glycemic index is very important. If you have this knowledge, you can put it to work for you. In a low-glycemic diet, you would eat carbohydrates ranked at the low end of a glycemic index. These low-glycemic foods are digested more slowly than those at the higher end of the ranking. If you are going to try and follow a low-glycemic diet, using a chart of ranking is essential. One cannot assume to know which foods are lower on the list. For example, pretzels are considered a diet food by most, but their ranking is 81 while spaghetti is 41. A dieter might skip a plate of spaghetti and try to "behave" and eat pretzels instead, when in fact the spaghetti is the better choice! This is one time that being at the bottom of the list is a good place to be!
